The constraint
The right price lives in one person’s head.
In most outlet stores, pricing runs on memory. Your most experienced processor looks at a pallet of closeout cereal and knows what it goes out at. They know the dented cans go lower and the seasonal candy has to move before the date. None of it is written down, because it never had to be.
That works until you need a second pricer. A new hire can run the scanner on day one, but they price wrong for months, and it’s hard to explain why. The rules were learned one pallet at a time.
